GARDEN EGG SAUCE


When life gives you plenty garden eggs, make garden egg sauce. lol. Garden eggs seem to be in season at the moment and asides having them as a snack with groundnut, this is another way to put them to good use. It tastes yummy and is healthy too. I only learnt this recipe last year from a colleague and i'm glad i did. I love meals that are easy and fast like my sharp-sharp chicken veggie sauce and this does not take long to get ready. It is also a great alternative to tomato stew. Let's start.


INGREDIENTS
10 large Garden eggs
5 Fresh tomatoes
Scotch bonnet peppers
Onions
2 tablespoons of ground crayfish
Smoked Fish
Boiled chicken
1 cooking spoon of vegetable oil
2 cooking spoons of Palm oil
Seasoning cubes
Curry Powder
Salt 


PREPARATION
  • Season the chicken and bring to the boil.
  • Boil the washed garden eggs in a separate pot for about 15 minutes and add enough water to cover the garden eggs.
  • Fry the blended tomatoes, pepper and onions with vegetable oil and palm oil.
  • Add the boiled chicken, chicken stock, ground crayfish, seasoning cubes, curry powder & salt.
  • Place the boiled garden eggs in cold water and peel off the skin using your fingers.
  • Mash the boiled garden eggs with a fork and add to the tomato stew.

  • Add the washed dried fish to the pot.
  • Stir, cover with a lid and leave to cook for about 15 minutes.
  • Serve with Boiled plantains, Boiled yam or boiled potatoes.
  • I enjoyed mine with boiled semi-ripe plantains.
